I have today made a contract on telekom with 6gb data volume (LTE) and the staff told me that I can watch unlimited youtube videos without the data volume I consume but when I go to the setting and my data consumption look there's 83 mb on youtube consumed (ps got me the huawei P20 pro) so I wanted to know if this is normal and what the employee also said that it is only on youtube so although on the telekom side it is on several streaming services SurfOn works

Your phone does not know how much data you have or if YouTube is unlimited.
Your phone calculates only how much this app consumes, it does not matter if you have Unlimited or just 2GB without StreamOn.
Just go to http://pass.telekom.de if you're on the mobile data network.
Here you can see your data consumption.
