Which would be better Apple IPad Pro or Huawei Matepad pro? I really want to buy a tablet / iPad and I wanted to ask what is better in terms of quality, what you think is better or from my own experience.

Unfortunately I don't know the Huawei, but I think the iPad Pro is awesome! It's so beautiful with an Apple Pencil! But I wouldn't recommend the current Pro to you, but the Air or you wait for the new Pro.
