I have been looking for an affordable, but preferably the cheapest, ultra / notebook (up to 800 euro) for a while. So far I have liked the Huawei MateBook D 14 but also the ZenBook 14. What do you think of them & do you think there are better (stylish!) Alternatives?

Unfortunately, MACs are unnecessarily expensive due to their apple on the hood. Neither is a notebook, let alone a laptop.
The question is, what do you value? If you throw terms like "stylish" around you, then you can't really be advised at all, because then we're deeply in the area of personal taste.
From a technical point of view, such a notebook should ideally have an Intel Ice Lake series processor, at least 8 GB RAM and a reasonable SSD (or at least a hybrid disk). The rest of the design (display, keyboard, etc.) depends on your preferences.
Macs are also a senseless monoculture that you shouldn't submit to.
