How can I install apps now? I've read about APK files but I don't think there's an APK file for all the apps I have…
In the end I'm afraid that I will have to do without some apps…

There's an own Huawei store called App Gallery. You can download it but not all apps are available there. Otherwise you have to download from the Internet. (All Google apps are not in the App Gallery, i.e. YouTube, Maps etc. I don't quite know, but I don't believe all Facebook apps either, because they come from America i.e. WhatsApp, Instagram etc. But I'm not sure)
The problem is that many apps for Huawei smartphones without a Google license are not available at all, since e.g. All banking apps, Huawei is in negotiations with all banks to include their apps in its own app store, as well as with many other providers.
Google blocks its own apps that have been downloaded as an APK file to the unlicensed Huawei smartphones, so the Playstore can almost not be used. There are always messages from users that the APK files no longer work on the P40 smartphones, and often they come from non-reputable sources

The P30 Lite and the New Edition are not much worse than the P40 Lite and both can still use all Google services, I have the P30 Lite myself and am enthusiastic about it, which offers good quality for little money
