Can I use a Xiaomi Band 5 or something else on e.g. Huawei? Or is bluetooth just bluetooth and that doesn't matter?

Bluetooth is just bluetooth.

Is just Apple somehow preventing Apple Watches from being connected to anything other than an iPhone.

Incidentally, the MiBand 6 will be announced tomorrow.
