Apps I currently have… WhatsApp, insta, snapchat, that's it. Youtube can unfortunately only be opened via the browser just like Gmail and that f *** t off, just like when you want to download apps you have to install different app stores…

I can help you there. Before you buy another one, try a few apps.
Youtube: There's the NewPipe app. NewPipe is an open source YouTube interface without advertising and with all the premium features. It is available free of charge from the F-Droid Store. F-Droid is a trustworthy app store that only offers apps that are open source.
Gmail: Simply install an email client, preferably open source, and you have Gmail again.
Google Play Store: If you need apps that are only available in the Google Play Store, download Aurora. That is also in the F-Droid Store and basically an anonymized Google Play Store.

Have you ever tried Huawei's Phone Clone to move apps from the old to the new? Phone Clone must be available in the P40's App Gallery

Basically I like it, but you feel like you used to have to look at different providers for different apps… I think that everything should be included with such a mobile phone or with such a provider.

Simply download it to your mobile phone. You may have to allow apps to be installed from "unknown" sources first, but don't worry, you can trust everything.
The phone itself is pretty good, I'm more of a Xiaomi fan myself.

You can download an email client for Gmail, I've been using Blue Mail on my devices for ages
I would keep the mobile phone via the Petal serch app you can download all the apps you have listed and as far as Gmail is concerned you can simply log in to the email app already preinstalled by Huawei. I'm completely satisfied with my P40.
