On Wednesday my instagram got an update and since then it is in dark mode. Have a Huawei P20 Pro how can I disable it? Because under settings I have not found a way to remove the Dark Theme.

The Darkmode comes when you have activated the system wide Darkmode in the phone.

What sense does it make please to update this in the phone, so you save power, but for apps that support this mode also want to disable that?

Either or… Either darkmode everywhere, or darkmode off. Then it disappears into Instagram.
