I would keep hands off that. Not only that you are limited to devices that are at least one year old if you don't want to do without all the Google services. After the recent intensification in the trade war, this can quickly threaten the existence of the company and in the worst case you would be sitting there without any updates.
Personal tip: take a look at Xiaomi. Their MIUI software is the most similar you will find to Huawei's EMUI.
